Preheat the oven to 375°F. Spray two mini-muffin tins with cooking spray.
Prepare the pancake mix according to the package directions. Spoon a tablespoon of batter into each cup of the prepared muffin tins. Divide the bananas and blueberries among them. Top with a few chocolate chips.
Bake until the muffins have puffed up and a toothpick inserted into the center comes out clean, about 15 minutes. Put the maple syrup in small bowls and serve.

In our Father’s Day menu, we created one of our clever edible “bowls” from shredded potatoes pressed into muffin tins to form a nest in which a tasty bite of sausage and an egg perch. Between that, the grilled cheese sandwiches shaped like ties, and fruit letters arranged to spell out a sentimental message, we’re pretty sure Dad will be charmed beyond measure.
